all-clad is the best it is very expensive so instead of buying a whole set buy the few you will use the most.

had based pans will cook the food more evenly. but any good quality stainless steel pans will do, dont go for cheap ones as they will not last.
I have a heavy duty stainless cookware set and 1 each 10″ & 12″ non stick saute pan. They are both made by Calpilon. They are excellent quality and cost $199.00 at Best Buy. They cost about a third of what you would pay for All-Clad. I’m very pleased with the performance I get from them.
